This happened to me as well, i went out and got attacked when i fell it reset my stats. As far as the poison bug that has happened to me and broke a couple of characters.
It does not seem to do it if i drop 1 applications at a time on the weapons.

The packs of willow wisps in Heartwood is a bit tough solo. Picture 3 mages with magic missile, 12 hits plus they have the healing skill and teleport when hit.

With "combat" i was expecting more martial arts and additional weapons. Unarmed combat and dual wielding, though the Goblins can use Swords, Shields, dual wield.

Yeah some packs i go 5 or six misses and some i hit every swing it seems random. I did try a build with more accuracy (Stag Helm) and it seemed to reduce the pain a bit. I think it is just part of the Alpha testing all systems, it may be different on go live. There will be more accessories and buffs to help out with the accuracy.

It makes sense that as your character "grow" they get better at hitting stuff.

So far Bandages and Herbal Rem only recover Endurance not health. Though i found Health Paste from Goblin but no way to use it.

Update
After going out and getting killed my Stats and Attributes reset but weapons are still locked

When re applying strong paste to my bow it broke my Character.
a. bow and arrows disappeared
b. Stats and Attributes are Broken
c. i cannot regain Endurance, Health or Mana
d. Staff and Bow are there just invisible

Playing as the assassin i have found the following issues.
Tero Kaze
Female Assassin

1. Character screen shows a picture of a naked Male Character
2. No inventory items can be seen
   a. Weapons are there but slots look empty and nothing shows i cursor is over it
   b. Wolf Head shows up but not Boots or Gloves
   c. Arrows and Trinkets do not show up
3. Attributes are off
   STR = 1000
   DEX = 10
   PER = 10
   INT = 800 -2800
   CHA = 1.8
   COS = 1200

I have a similar issue with my assassin, i cannot see my weapons. I can "TAB" through the so i know they are there but cannot see them

I have the same issue with my assassin class as well
