For me. there can be a simple joy in farming games when you plant and wait. Not so much the ones where it's no different than crafting a sword, like in Lord of the Rings Online. But unlike a sword you can't set it to grow in bulk or keep doing it automatically. Just the same few keystrokes over and over again. So boring.

The biggest problem with forcing multiplayer is finding other people who want to do that content. Will there be enough people to sustain a bunch of different settlements beyond the first few months?

As long as roads have upkeep over time (doesn't need to be monsters destroying them), I'd be fine with it. But even in a sandbox, I wouldn't want to see miles and miles of paved terrain in 'grinding areas' or 'swearword' on the ground.
Don't forget immersion-breaking advertising.
